There are some hot new things going on in the coffee industry in Australia as well as worldwide. Being not only one of the the top cafes in the west but also in all of Sydney has made it important for us to track what is happening around the city and in Melbourne. Even before it became big we had begun playing around with single origins, ethical coffee, and alternative brewing methods. Not only is coffee a great social drink, the experience of coffee in different formats is quite social. The ritual of rolling out our cupping table and trying to entice others to taste coffee in a new way has been fun. Tasting the unique flavour notes found in various single origin coffees I have roasted at home or at the cafe has given me a new appreciation for the diversity in coffee and an enjoyment of the variety found in the simple bean.
